A heaping plate of the latest refinement to my apple/oatmeal/raisin/pecan recipe.

I call this the "supermoist" recipe!


6 medium to large green apples, skinned and grated fine.

2 cups of oatmeal mix

1 cup of white sugar

1 cup of brown sugar

1 cup of flour (with baking soda mixed in)

1 tablespoon cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon salt

1.5 cup raisins

1 cup crushed pecans

2 sticks (1 cup) Butter

1 can of coconut milk (or two cans if you really want to taste the coconut flavor in the cookies)

3 eggs

1/2 teaspoon vanilla extract

3 tablespoons honey

[This recipe makes about 60 medium sized cookies]


Pre heat oven to 350 f

Add grated apples to a glass casserole dish and spread evenly over surface. Dust apples surface with cinnamon (separately from tablespoon amount to be added to mix later) Add the coconut milk to the casserole making sure to let the milk fill in the spaces between the apple shreds. Cover with tin foil and puncture breathing holes. Place in oven for 50 - 60 minutes.

Mix preparation:

Add the butter into the main mixing bowl and let soften

Add the Flour, baking soda , salt , cinnamon and nutmeg to a suitable container and sift until homogeneous.

Add the brown and white sugar together into a bowl.

Crack the three eggs into a small bowl, scramble lightly then add vanilla extract set aside.

Use the hand mixer or spoon to whip some air into the butter in the main mixing bowl. When satisfied add in sugar mixture making sure to mix thoroughly. When finished pour in egg/vanilla mixture and continue to blend creamy. Now, add the flour mixture into the blend, making sure to get rid of all bubbles. Now, start pouring in the oatmeal, mix until all oatmeal oats are wet. Now, pour in the pecans and mix, followed by the raisins. Try to avoid breaking the raisins while mixing. Now, pour in the honey and mix again. Set aside mixture for about 4 minutes. You want to time the mixing process described above so that it is concluded at about the same time that the apples are finished baking. Once the apples are finished baking take them out and spoon the hot mixture into the waiting oatmeal batter. Mix thoroughly, set aside for 3 minutes.

Prepare your baking sheets or trays as needed. I use silicone bake sheets that only need to be run under water to be ready. Spoon out the batter in heaping cookie sized amounts, it might be a little runny you can add in oats to firm up the batter to your taste but this also reduces the moistness of the final cookie. Load your trays up with the cookies and bake them at 350 for 16 - 20 minutes or until the edges and tops start turning golden brown.

Remove trays, let cool and then remove to cooling tray. Enjoy!

2 cups flour (1 cup white unbleached, 1 cup whole wheat)
2 tsp baking powder
1 tsp baking soda
1 ? cups sugar
? tsp xanthan gum powder
2 tsp cinnamon
? tsp ginger
? tsp nutmeg
? tsp cloves
1 tsp salt
1 cup shredded coconut
4 cups rolled oats (not instant)
1 cup raisins
2 cups soymilk
1 tbsp vanilla
1 tsp apple cider vinegar
1 cup soft margarine (Earth Balance)
1 tbsp molasses

Mix all wet ingredients in blender.

Mix dry ingredients (except oats and raisins) in large mixing bowl.

Mix wet mixture into dry mixture.

Add oats and mix in thoroughly.
Fold in raisins.

Press spoonful size balls flat on to cookie sheet.

Bake at 325 for 25 minutes.
